Menu Plan Monday - Oct. 4th

October already?!  This year is flying by!  Last week we had lots of leftovers, which was great for the budget.  I'm trying to tighten up and get our food budget down.  My husband starts this week working graveyard three nights a week, on top of his other job, so I'm going to work on some recipes for him that can freeze well and he can take with him.

Last week we had:

Monday
(this was killer!  Very easy, and very tasty)

 Tuesday
leftovers

Wednesday
leftovers

Thursday
(last week I made it with pinto beans and added a large bunch of chopped
swiss chard, everyone loved it and didn't even ask "what's that green stuff?"  :)

Friday
leftovers

Saturday
Sabbath Dinner
Pot Roast with mashed potatoes and seamed broccoli, and of course Challah bread

Sunday
leftovers

This week the menu is:

Monday:  beef barley soup (made with leftover roast, and we have leftover challah bread)

Tuesday:  beef and bean bake, recipe from Lynn's Kitchen Adventures (I'm going to use my leftover bean soup for this recipe)

Wednesday:  leftovers

Friday:  leftovers

Saturday:  family get together!  Pizza party!  Grilled pizza on the weber

Sunday:  leftovers

And here is what I plan on baking this week:
cowboy calzone (from the Pioneer Woman cookbook)
