Delicious Buttermilk Biscuits

These biscuits I make often when we have soup.  They are quick and very easy.  If there are any leftovers, we've made breakfast sandwiches with them.  I've also used this recipe as a topping for my chicken pot pie.

Delicious Buttermilk Biscuits
adapted from Joy of Cooking

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
6 tbs cold butter, cut into pieces
3/4 cup buttermilk

*Preheat oven to 450 degrees.

*In a large bowl, whisk together the dry ingredients.

*Add the cold butter and cut in with a pastry blender, or your fingers.  Work quickly, you don't want the butter to melt into the flour.  Continue to cut in the butter until the pieces are the size of peas.

*Add the buttermilk.  Mix with a fork just until most of the dry ingredients are moistened.

*With lightly floured hands, gather the dough into a ball and gently knead it against the sides and bottom of the bowl until the loose pieces of dough adhere and the bowl is pretty clean.  

*Transfer to a lightly floured surface.  With  your fingers or rolling pin, pat or roll out the dough to about 1/2 inch thick.  Cut into rounds using a biscuit cutter (or you could use a drinking glass) that is dipped in flour.

*Place biscuits on baking sheet at least 1 inch apart and bake for about 12 minutes.  

*Serve hot with lots of butter!
