Soul Warming Chicken Pot Pie

One of my favorite meals to make is Chicken Pot Pie. It's perfect for a cold fall day, and it warms you to your soul. Mine is a little different than the normal pot pie since I like to use broccoli and I topped it with one large buttermilk biscuit.  The entire family enjoyed this so much, that we had just enough leftover to feed the children and I for lunch the next day.

Amy's Chicken Pot Pie

3 cups cooked, chopped chicken
3 cups cooked, chopped broccoli
1/2 stick butter
1 large onion, chopped
3 carrots, shredded
1/2 tsp dried thyme leaves
1 tsp salt
1/4 tsp pepper
2/3 cup flour
3 cups chicken broth
1-1/4 cup milk

*Preheat oven to 450 degrees. Heat butter in dutch oven over medium heat.

*Add onion and shredded carrots and cook until soft. Add flour, thyme, salt, and pepper. Cook, stirring for about 1 minute.

*Gradually add the chicken broth and milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to a simmer and thickens.

*Add cooked chicken and broccoli. Adjust seasonings to taste.

*Top with buttermilk biscuit dough and put a few slits in the top. Bake for about 20-25 minutes, or until top is golden.
